Hello, everyone! The sun is shining and the air is fresh and warm...it’s almost Easter. Hard to believe after a long, dreary winter. It’s time to celebrate spring whether you celebrate Easter or not. But part of the fun is enjoying treats that you wouldn’t normally have. Which brings me to one of the topics in health coaching...joy! Of course, it’s good to maintain a healthy diet and an exercise regime, but sometimes you just need a treat.
I have attached a recipe that is sure to bring you joy, and it will not have you overwhelmed by multiple, complicated steps or a long list of ingredients to seek out in the grocery store. This recipe for Scandinavian Almond Cake is so simple, and every time I bring it to a gathering, I always am asked if I could share the recipe.
The only thing you will need to get is a special pan. Just search Scandinavian Almond Cake Pan in the Amazon search bar and you will find this at a reasonable price. You’ll want to break it out for many different occasions. Just make a few copies of the recipe to be prepared for the inevitable requests for you to share it. Enjoy!
Scandinavian Almond Cake
-1 ¼ Cup sugar
-1 ½ tsp. Almond extract
-2/3 cup milk
-1 ¼ cup flour
-1/2 tsp. Baking powder
-1 stick melted butter
-1 small bag of slivered almonds
-powdered sugar for dusting
-mixed fresh berries for decorating
-beat 1 ¼ cup sugar, 1 egg, 1 ½ tsp. Almond extract and 2/3 Cup milk until smooth
-stir in 1 ¼ cup flour and ½ tsp. baking powder
-gradually stir in the melted butter
-spray the bottom of the pan generously with non stick spray
-sprinkle the bottom of the pan with slivered almonds to cover in an even layer
-gently pour the batter into the pan covering the almonds and filling the pan
-bake at 350 degrees for 40-50 minutes until edges are golden and the cake no longer jiggles
-cool in pan completely
-place cooling rack over pan, hold firmly and flip onto rack
-place cake on a rectangular platter
-using a sifter, dust cake with powdered sugar
-decorate around the cake with fresh mixed berries
